Method
  1. Cook pasta according to packet instructions. With 3 minutes to go, add peas to the pot of pasta. Finish cooking, then drain and set aside.
  2. Meanwhile, heat a drizzle of oil in a frypan over a medium-high heat. Add bacon and onion and fry for 8-10 minutes, or until cooked through and crisp. Transfer to a plate lined with paper towel.
  3. Combine pasta, peas, bacon and onion. Divide into 2 serving bowls. Dress with a drizzle of oil and top with freshly grated parmesan cheese.

  1. Heat oil in a frying pan over medium heat. Add spring onion and garlic and cook for 1 minute.
  2. Add parsley, sardines, lemon zest, juice of one lemon quarter and chilli, if using. Toss together in the pan until sardines are warmed through (2-3 minutes).
  3. Meanwhile, toast the bread.
  4. Top toast with sardine mixture. Garnish with freshly cracked black pepper and serve with the remaining lemon wedge.

Note: You could replace goat’s cheese with fetta or grated cheddar cheese.

Method
  1. Add eggs to a small pot and cover with water. Bring to the boil and cook for 4 minutes for so!-boiled. (Cook for 7 minutes for hard-boiled). Carefully discard boiling  water and place eggs into a bowl of iced water.
  2. Meanwhile, toast the bread and top with avocado.
  3. Once the eggs have cooled slightly, peel away the shell and place on avocado toast.
  4. Crumble over goat’s cheese and sprinkle with chilli flakes, if using. Serve immediately.

  1. Preheat oven to 180˚ C. Line a 12-cup muffin tin with muffin liners and spray with extra virgin olive oil.
  2. In a mixing bowl, combine almond meal, cinnamon and baking powder.
  3. In a separate mixing bowl, combine yoghurt, peanut butter, honey, oil and egg.
  4. Fold the wet ingredients into the dry ingredients, then fold through blueberries.
  5. Distribute muffin mixture evenly over the 12 muffin cases. Sprinkle 1 tsp seeds on top of each muffin. Bake for 30 minutes.
  6. Remove muffins from oven and set aside to cool slightly. Transfer onto a wire rack to cool completely before enjoying.
